Inconjunctionwithaperfectstomachthatcoulddigestanything,hepossessedknowledgeofthevariousfoodsthatwereatthesametimenutritiousandcheap. Pea-soupwasacommonarticleinhisdiet,aswellaspotatoesandbeans,thelatterlargeandbrownandcookedinMexicanstyle. Rice,cookedasAmericanhousewivesnevercookitandcanneverlearntocookit,appearedonMartin’stableatleastonceaday. Driedfruitswerelessexpensivethanfresh,andhehadusuallyapotofthem,cookedandreadyathand,fortheytooktheplaceofbutteronhisbread. Occasionallyhegracedhistablewithapieceofround-steak,orwithasoup-bone. Coffee,withoutcreamormilk,hehadtwiceaday,intheeveningsubstitutingtea; butbothcoffeeandteawereexcellentlycooked.
Therewasneedforhimtobeeconomical. Hisvacationhadconsumednearlyallhehadearnedinthelaundry,andhewassofarfromhismarketthatweeksmustelapsebeforehecouldhopeforthefirstreturnsfromhishack-work. ExceptatsuchtimesashesawRuth,ordroppedintoseehissisterGertude,helivedarecluse,ineachdayaccomplishingatleastthreedays’laborofordinarymen. Hesleptascantfivehours,andonlyonewithaconstitutionofironcouldhaveheldhimselfdown,asMartindid,dayafterday,tonineteenconsecutivehoursoftoil.
